Traditional Phad Thai

One of my favourite dishes of all time! Basically lived off it when I was traveling Thailand for 4 weeks. I went to a traditional Thai cooking class where I was obsessed with learning all my favourite Thai dishes. This is the exact recipe from the recipe booklet I received.

Pad Thai Noodles are Thai style spicy rice noodles which are super easy to make at home. Make this authentic Asian treat vegetarian or with chicken and shrimp, you are going to love it. Here is how to make Pad Thai Noodles Recipe at home.
INGREDIENTS
300 g Pad Thai Noodles
2 tbsp Sesame Oil
2 tsp Garlic Chopped
1 tsp Red Chilli Chopped
3 eggs
4 spring onions
2 carrots (grated)
Tofu
1/2 cup Bean Sprouts
1/4 cup Roasted Peanuts, crushed
2 tbsp fresh coriander
Chopped 5-6 lime wedges
For the Pad Thai Sauce
3 tbsp Soy Sauce
3 tbsp parm sugar
1 tsp Tamarind Paste
1 tsp Red Chilli Paste
2 tbsp Fish Sauce Skip for Vegetarian Version
Salt To taste
1/2 cup Water
METHOD
Soak the noodles in warm water for 5-8 minutes until they are soft.
Drain the water and add a few drops of oil in the noodles.
Mix well and keep aside.
Mix all the ingredients to make the sauce in a pan.
Bring the mixture to a boil and simmer for 3-4 minutes on medium heat.
Heat sesame oil in a pan. Pan must be very hot
Add garlic and red chilli and fry for a few seconds.
Add egg, carrot, tofu, spring onion and bean sprouts and fry for 3 minute.
Add the cooked noodles and sauce in the pan and toss well.
Garnish with roasted peanuts, coriander, some left over spring onion, bean sprouts and lime wedges.
Extra chilli if you like heat
Serve hot.
