Super Simple Cherry Tomato, Basil and Olive Oil Pasta

Trust me on this one! SIMPLE but utterly yummmm!! Perfect for a weeknight dinner party with friends. Serve with a crisp green salad and delicious wine (always!)


200ml extra virgin oil oil

600g cherry tomatos

30ml Balsamic vinegar

40 fresh basil leaves

500g Pasta of your choice

sea salt and pepper


Heat the olive oil in a pot and braise tomatoes in the oil. They will swell gently and burst the skin, creating a very flavourful olive and tomato sauce, DO NOT stir and take off the heat, cover and leave for 10 minutes

Meanwhile, boil pasta in salted water until cooked. Drain and add into sauce

Season and add balsamic. Shred basil leaves and stir them into your pasta.

GARNISH with a few whole basil leaves. Serve with freshly grated parmesan!
