One-cup Microwave Chocolate Pudding
Now this made me so excited and it was a quick fix for a dessert during a cold day in lockdown! Took a total of 7 minutes and this is for 1 serving in a large cup! If you are lucky enough to be more organised than me, serve with cream or ice cream!

Makes 1
INGREDIENTS
4 tbsp self-raising flour
4 tbsp caster sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable oil or sunflower oil (I only had olive oil and it worked out just as good)
a few drops of vanilla essence or other essence (orange or peppermint work well)
2 tbsp chocolate chips, nuts, or raisins etc (optional)
INSTUCTIONS
Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave)and mix.
Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
Centre your mug in the middle of the microwave oven and cook on High for 1½ mins
BAKING TIPS FOR CHOCOLATE MUG CAKE
Make sure to use a mug that is big enough as the batter will rise quite a bit in the microwave. I suggest using at least a 12-ounce mug for this recipe.
When measuring your flour, make sure to spoon it into the measuring cup and level it off with the back of a knife.
Keep a close eye on the cake as it’s in the microwave and cook it until the center is just set. I find that 1 minute and 15 seconds is perfect, but the amount of time may vary slightly for you.
