Flourless Peanut-butter, Chocolate dipped Cookies
Trying to be healthier this new year but still need to treat-yo-self
A healthier cookie made with only five simple ingredients — peanut butter, dates, egg, vanilla, and dark chocolate. Can you get any easier than that? It’s a sugar-free, flourless, and butterless cookie that tastes absolutely heavenly!
A girl has to do what a girl has to do to still be able to eat her cookies when she is watching her waistline!
1 cup Peanut Butter
1 cup Dates
1 large Egg
1 Tablespoon Vanilla
100g Dark Chocolate (melted)
Chopped Peanuts (optional)
Preheat oven to 180 degrees.
Line a baking sheet with a Silpat or parchment paper or lightly spray with non-stick cooking spray.
In a food processor, pulse the dates for 1 minute. Add peanut butter, egg, and vanilla and puree until smooth.
Roll the dough into 15 balls and place on the baking sheet. Using a fork, press down on the center of the cookie to make a criss-cross pattern.
Bake at 180 degrees for 8-10 minutes. Watch carefully as the cookies will still look soft when baking time is completed.
Remove cookies from oven and let cool for several minutes. Before dipping in chocolate, freeze cookies for 15 minutes to allow them to set-up.
Melt chocolate in a double boiler or at 50% power in a microwave-safe bowl for 30-second increments. Stir often just until melted, being careful to not overcook the chocolate.
Drizzle the chocolate over half of the cookies or dip half of the cookie into the chocolate. Sprinkle with chopped peanuts. Let set up for a few minutes.
ENJOY, these cookies are phenomenal. I hope you love them as much as I do! Happy Baking!
